Jack-O'-Lantern Stuffed Peppers
A Spooktacular Treat for Halloween
Ingredients:
  • 4 orange bell peppers
  • 1 lb (450g) ground beef or turkey
  • 1 cup cooked rice
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup tomato sauce
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • Salt and pepper, to taste
  • 1/2 cup shredded cheese (optional)

    Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Peppers: Cut off the tops of the bell peppers and remove the seeds. Using a small knife, carve out jack-o'-lantern faces on the front of each pepper.

    Cook the Filling: In a skillet, cook the ground beef (or turkey) over medium heat until browned. Add the chopped onion and garlic, and sauté until soft. Stir in the cooked rice, tomato sauce, paprika, cumin, salt, and pepper. Simmer for 5-10 minutes.

    Stuff the Peppers: Spoon the meat and rice mixture into the hollowed-out peppers. Place them in a baking dish, cover with foil, and bake for 30 minutes.

    Optional: Add Cheese: If you like, sprinkle shredded cheese over the stuffed peppers in the last 5 minutes of baking to melt on top.
